Position: Cook / Food Service

Location: Outdoor Education Center, a 350 acre wilderness near Harpers Ferry, WV

Program: Summer Program, April 11 – August 12, 2016 (Flexible)

Position Description: The Outdoor Education Center (OEC) is seeking qualified individuals to plan, prepare and manage daily kitchen duties and special projects as they relate to a camp setting. The cook will oversee safety procedures, equipment use and care, and environmental concerns as related to Outdoor Living Skills activities.

Individual Responsibilities
• Participate in paid staff training
• Plan a standard menu of nutritious meals in conjunction with the Director and Site and Sustainability Coordinator.
• Prepare all meals for groups of up to 128 people (children and adults) seven days a week or as needed
• Skill in managing cooking processes so that food items are served on time and that safe temperature and time controls are met
• Knowledge of sanitation procedures
• Adhere strictly to food storage and food health standards
• Manage kitchen and dining hall clean-up
• Mentor, supervise and provide learning opportunities for Assistant Cook/Kitchen Intern
• Use knowledge gained from training, camp resources, and personal experience to develop, plan and prepare high quality, healthy, nutritious and organic meals
• Manage inventory, and costing per meal
• Two years related work experience
• Ability to work long hours in all kinds of weather
• At least 21 years old
• Prior experience cooking/prepping meals for large groups required
• Formal food preparation and handling training a plus
• A genuine interest in working with young people
• Ability to work independently and with no direct supervision
• Excellent problem solving, organizational, and communication skills
• High degree of leadership and self-discipline
• Ability to finish tasks to completion with little supervision
• Ability to prioritize work according to demands and established timeframes
• Endurance, energy and strong commitment required
• Salary depends on experience and number of programs worked
• Ideal setting for outdoor adventures (OEC is located between the Appalachian Trial and the Shenandoah River).
• All Kitchen Staff will get certified in CPR/First Aid and ACA Water Safety Tandem Canoe
